Disney Parks Blog article. The handy charts provided in that blog entry show the vast majority of attractions without height restrictions can be found at the Magic Kingdom Park. So if maximizing the number of rides your family can enjoy together is a goal, I would recommend spending both days there. My family and I have visited the Walt Disney World Resort numerous times, and I can tell you from our experience that you could easily spend more than two days at Magic Kingdom alone.
If your heart is set on exploring two parks, I would suggest Disney's Animal Kingdom Theme Park as your second choice. Again, please refer to the height restrictions charts found in the article provided above. There are several attractions without any height requirements there, such as the Na'vi River Journey. Furthermore, your little one will absolutely LOVE seeing all the exotic animals, and your entire family will be in wondrous awe of
