This is a great question. I too have an upcoming Walt Disney World Resort trip where I have no plans for breakfast one morning and am completely torn. I honestly might end up picking one out of a hat! The good news, and bad news, is that you'll have over a dozen close
dining options from Disney's Wilderness Lodge. At least you'll have a plan A, B, C and so on!
From your
Disney Resort Hotel you'll be able to easily get to The Settlement area of Disney's Fort Wilderness as well as Disney's Contemporary Resort via the same Boat Launch on Bay Lake. And then from Disney's Contemporary Resort, you can jump on the Monorail and easily get to Disney's Polynesian Village Resort and Disney's Grand Floridian Resort and Spa.
If you're looking for a Character Breakfast, Ohana is highly desired booking. Served family style, this all-you-care-to-enjoy venue serves Mickey Waffles and breakfast classics like eggs and sausage with an island touch of Lilikoi juice and a sweet bread. You'll also meet Mickey, Pluto, Lilo and Stitch.
For buffets, I have heard and read a lot of wonderful reviews of both The Wave of American Flavor as well as Trail's End Restaurant. Trail's End has a fantastic weekend brunch that serves the Disney-famous POG juice as well as the same famous fried chicken found at Hoop Dee Doo Musical Revue.
For a table service meal, a lot of people love Kona for the Tonga Toast (banana stuffed french toast) and the mimosa flight. But you can also get a similar portion of Tonga Toast around the corner at the quick service Captain Cook's.
Lastly, don't overlook the hilarious Whispering Canyon Cafe. Their breakfast skillets will keep you full until you get home, and the hijinks will help bookend the fun of your last Disney day.
