Planning for Pre-School Kids & Little Ones that will give you lots of great information including the best attractions in each of the theme parks.
There will be plenty of rides, shows, and activities that you can do with your son. You will be able to hold him on your lap or right beside you. You can take your little one on any of the rides where he meets the height requirements. Keep in mind that just because a child meets a height requirement, doesn't mean that attraction is right for them (i.e., Haunted Mansion). All kids are different and you know your son better than anyone.
Most counter service and table service dining locations offer food options that little ones like including chicken nuggets, yogurt, applesauce, milk, and juice. You can see the menus online for each dining location. We always pack snacks and water (even for the adults) to avoid waiting in line. I have a special needs son on a limited diet so we often take a small soft cooler with food for him. If you decide to take food with you to the parks, keep in mind that food service locations are not able to heat up any outside food. However, you can heat food at Baby Care Centers located in each park. Just remember that glass containers are not permitted in the parks.
