Hi Alisha,
It sounds like you have only been really recommended "Chef Mickey's" (one of my families all-time favorites by the way!), but there are many other options as well. I will give you a few, or until I run out of my word count. In Animal Kingdom there is a really cool Breakfast Dining experience "Donald's Safari Breakfast" at the Tusker House restaurant located in the Africa section of this park. I also love the food here, you will enjoy your traditional American breakfast items such as scrambled eggs, ham, etc...as well as some African inspired dishes.
Another Character dining experience I believe is a "must do" would be the Character Breakfast at "Cape May Cafe" located at Disney's Beach Club Resort, (where Goofy is your host, and a few of his closest pals). I cannot say anything negative about this experience...the food, atmosphere, location, friendly staff, etc..etc.. is all 5 star in my opinion.
For that loveable character Stitch and his sidekick Lilo, I suggest "Ohana's Best Friends Breakfast with Lilo and Stitch". This restaurant is located at one of my favorite resorts "The Polynesian" for that real Hawaiian flair. To finish, would be "Mickey's Backyard BBQ", located at The Fort Wilderness Campground (my old stomping grounds as a kid). This is a Dinner Show where you will meet Mickey, Minnie and the gang along with your merrymakin' hosts, Sarsaparilla Sal and Tumbleweed, who will get you into the 'foot stompin' mood and teach you some line dancing as well.
