I've got a few ideas that will hopefully help with your plans:
Idea #1:
Character Dining Experiences
While it's ideal to get reservations 180 days out, last-minute cancellations happen all the time. Call (407) WDW-DINE or download the My Disney Experience app on your phone and you can possibly snag a recently forfeited reservation.
Idea #2:
Character Meet-and-Greets
Grab a guide map and times guide at each of the theme parks to see where you can find the characters hanging around that day. If you aren't planning to do any of the character dining experiences, this is a great alternative for your daughter to meet with some of her favorite pals.
Idea #3:
Parades
My daughter absolutely loves the "Move It! Shake It! Celebrate It! Street Party" in the Magic Kingdom because she can sing and dance alongside her BFF (Mickey Mouse!).
Here's a bonus idea from your buddy Derek:
You'll see a wide variety of autograph books for sale in the various gift shops. My little girl loves the ones that have a spot on each page for a photograph to be inserted as well. That way, it's like a mini scrapbook for her to thumb through as she reminisces about the times she hung out with her favorite pals at Walt Disney World.
