I certainly understand. It can be a little intimidating once you factor in the numerous facilities, with all the options in each, spread out across the parks, resorts, downtown area, etc. (yikes)...
To start things off, you may want to consider the Fantasmic dinner package at Hollywood Studios. This dinner package is carried at 3 restaurants: The Hollywood Brown Derby, Hollywood & Vine, or Mama Melrose's Ristorante Italiano. You make the reservation, and then after you eat, you're given Fantasmic Preferred Seating tickets to watch the Fantasmic show in a very good spot. I've never eaten at Brown Derby, but of Hollywood and Vine (American) and Mama Melrose (Italian) they are both equally good. Fantasmic (a fireworks show) is...well...fantastic!
The Hoop Dee Doo Music Revue (Wilderness Lodge) is a GREAT dinner show. Be treated to good "home-style" food and a great Western themed show. Very funny!
Whispering Canyon Cafe (also at Wilderness) is not a dinner show, but it certainly is a great experience. It's a family style meal with large portions, and the staff there are very funny. Definitely ask for ketchup when you're there, even if you don't need it...
California Grill (Contemporary) serves up some excellent dishes, plus you can get a premium window view to Wishes fireworks across the street, if you reserve near the start time of that show.
