Bay Lake Tower at Disney's Contemporary Resort is my husband's favorite Disney Vacation Club Resort! You are going to LOVE it! The Resort hotel is amazing and the ability to walk to Magic Kingdom is the icing on the top of a very magical cake!
I'm going to start by recommending some restaurants that are super convenient for you. California Grill and Chef Mickey's are 2 very popular restaurants at Disney's Contemporary Resort. Because of their popularity, it may be difficult to get a reservation though. Another great option, that is just a quick Sky Way Bridge walk away, is
The Wave...of American Flavors, also at Disney's Contemporary Resort. It has a great dinner menu and a wonderful lounge. The Grilled Beef Tenderloin was magnificent and I loved every drop of my Magical Star Cocktail.
You can also hop on the Resort Monorail and stop at either Disney's Polynesian Village Resort or Disney's Grand Floridian Resort. Kona Café at Disney's Polynesian Village Resort is a favorite of mine. It has a casual and relaxed atmosphere and the food is always great. At Disney's Grand Floridian Resort, I would highly recommend
Narcoossee's and Citricos is another great option.
If you are looking for something a bit more casual, you will find several quick service options at the Monorail Resorts as well.
