If I arrive on a Saturday and check out on Friday will I have 6 days of the Dinning? So even if I don't go to the parks on Saturday I could use my dinning? And also if I have left over on that Friday before I leave could it still be used?

The number of dining credits you are allotted depends upon the number of nights in your package.  In your case, you are staying six nights, so you'll have six days worth of credits.  The exact number of sit-down, counter service, and snack credits will depend upon whether you purchased the deluxe dining plan or not.  If you did, you'll have a total of 18 meal credits available as well as 12 snack credits.  If you purchased the standard plan, you'll have six table-service meals, six counter service meals, and six snacks.

Your dining credits will be available for use as soon as you check in and receive your Key To The World card; you don't have to enter a theme park to activate the dining credits.  Any unused credits expire at midnight on the date you checkout.  So, even after you check out from your resort, you could use the remaining credits as long as you do so before midnight.
