You may begin using your Disney Dining Plan the first day you check-in to your Disney Resort hotel up until midnight on the day you check-out. You actually receive an "extra day" to redeem all of your snack and meal credits!
The number of meal and snack allotments in your Disney Dining Plan are calculated based on the number of nights you stay at a Disney Resort hotel. Since you mentioned you have a 14 day Disney Dining Plan, that tells me you have a 14 night Disney Resort hotel reservation (Congratulations by the way!) The Disney Dining Plan is very flexible and you are allowed to redeem your meal and snacks in any order or amount you wish. Therefore if you have meal or snack credits left on the day you check-out, you may continue redeeming them. This also includes using your Rapid Fill Resort Refillable Mug on your check-out day. Personally I love to use any leftover snack credits to purchase edible souvenirs to take home and also meal credits to fill up my rumbly tummy before our trip home.
