Let's get to your answer so you can get back to planning!
You are correct that your window opens up for
advanced dining reservations as well as booking your enchanting extras from
Disney's Enchanting Extras Collection 60 days from your date of arrival. At that mark, you have 10 days in the future to make reservations as well which should cover your full trip. I am sorry to say that this is a blanket rule for those Guests staying onsite at a Disney Resorts Collection hotel and unfortunately Annual Passholders and Disney Vacation Club Members do not have any extra benefit.
I will share with you one strategy that works well for my family on our visits to Walt Disney World Resort and that is booking things in reverse. On the morning of our 60-day window, I try to get all of the very popular reservations, like a meal at
Cinderella's Royal Table, and magical extras, such as
dessert parties, booked later in our vacation and work my way back. Fewer people have access to the dates later in your trip so you might find the most availability during those times giving you the best chance to snag the hard-to-get reservations. Make sure you are online early for dining reservations as they usually open at 6:00 AM EST to give you the best chance for your requests as well.
