So glad you're back with more questions, Kayla!
You can find the 2012 Dining Plan linked here. For each night of your stay, you have one Table-Service Entitlement, one Quick-Service Entitlement and a Snack per person. All of these are credited to your Key to the World Cards, which also serve as your room keys and park passes. Use these entitlements any way you'd like until midnight after check-out. You'll also each receive a resort-refillable mug, which can be refilled at any Quick-Service location in your Disney Resort Hotel. Gratuities, though, are not included in the plan.
Pack or ship down some light breakfast items, and use your two daily entitlements for the rest of the day. Yes, character meals and buffets are included, but Signature Restaurants and Cinderella's Royal Table use two.
What I like most about the Dining Plan, though, is the value. (Prices are approximate, used for illustrative purposes only.) For example, at Epcot's Le Cellier, (lunch is still one entitlement) I'll order the mushroom filet mignon (about $28). Add to that creme brulee and an iced tea, and my total is around $40. For a Quick-Service dinner, head to Sunshine Seasons (at Epcot's The Land pavilion) for oak-grilled salmon, with rice or veggies ($11), a Vitamin Water ($3) and an enormous slice of Key Lime Pie ($4). My daily meal total is now near $60, but it's all been included on the Dining Plan...and I still haven't added in the cost of a snack as well as the $ saved by using the refillable mug at my resort. It's a great deal!
Should you have more questions once you've committed to traveling with or without the Dining Plan, please send them my way! I'd love to help!
