Since you're staying at Disney's Pop Century Resort, use Extra Magic Hours if you can. If the little ones are early
risers these opportunities may give you a bit more park time both before and
after the main heat of the August day.
Here's one possible schedule:
8/7: pool day! (Unpack, check out activity schedule for the pool, movie night, etc. Early to bed!);
W 8/8: MK;
TH 8/9: MK EMH 8a.m.; be SURE to get a free birthday button, so
everyone
will spread birthday wishes as you tour the park. Park Hopper passes? Consider hopping to Epcot via monorail;
F 8/10: pool day;
Sat 8/11: HS EMH 8a.m.
; Sun 8/12: Epcot
; M 8/13: pool day / Downtown Disney (no ticket required)
; T 8/14: Park of your choice
Save your loose change so
the kids can have their own spending money. Have your bank convert it to cash and divide that among the kids for souvenir money.
Check out the

approximate pricing and menu choices for each WDW restaurant. According to this site, your
family could spend under $35 for two kids meals and two adult entrees at
Sunshine Seasons (The Land, Epcot); add another $6-7 if your littlest
one isn't eating from others' plates.
Bring your own wide-mouth, refillable bottles; NEVER spend $ on
a beverage in the parks if you can bring your own from your
hotel / car. Fill them with ice from the hotel before you leave; it's icy cold all
morning. By the way, all Value Resorts will have mini refrigerators installed at some point this year; check in again to see if POPC's will be installed in time for your August trip!
