You do not need to carry your passport around
Walt Disney World just to pick up your theme park tickets. Your valid, government-issued Mexican photo ID will be perfectly fine for identification purposes. That's actually what I personally do whenever I visit Walt Disney World from Mexico. I would much rather keep such an important document somewhere safe than carry it around the theme parks all day!
As far as the credit card you used to purchase your tickets goes, having it available digitally through your Apple Wallet and banking app should not be a problem. Contactless forms of payment, like Ashley already told you, are widely accepted throughout Walt Disney World.
If you need to visit a ticket window or Guest Relations location to pick up or resolve anything related to your tickets, simply have your Mexican government-issued photo ID ready. I would also keep your ticket confirmation information easily accessible on your phone, just in case a Cast Member needs to look up your purchase.
Once your tickets are properly linked to your My Disney Experience account, you'll also be able to use options like Disney MagicMobile right from your phone to enter the theme parks, which makes everything even easier.
