Hi Casey and many congrats on your doctorate! That is quite the achievement and you have chosen the perfect place to celebrate!
While may argue that Disneyland can be experienced in 3 days, I disagree. While it is possible to see and do a lot in 3 days, I prefer to have the luxury of being able to move at a slower pace which enables me to notice the small little details that others seem to pass right by! In my opinion 5 days is an ideal timeframe...especially since this is your first visit! This way you can devote 2 full days to Disneyland and 1 to California Adventure leaving two days to go back and revisit your favorite attractions and to explore Downtown Disney and the Disneyland Hotels. I usually spend a full week and I never feel rushed or pressed for time... I also never leave with the feeling that I missed out anything.
As far as hotels go, Disneyland Resort offers 3 unique choices in accommodations with something to fit every taste and budget! My personal favorite is the newly renovated Disneyland Hotel, and you can read why by reading this

Another fabulous hotel is Disney's Grand Californian Resort and Spa, located smack dab in the middle of the magic with easy, exclusive access to both Downtown Disney and California Adventure! This Arts and Crafts style hotel is reminiscent of the lavish lodges of the Great Northwest. Be sure to have a meal at the award-winning Napa Rose restaurant, the perfect celebration venue, and for a day of relaxation, head over to the one of a kind Mandara Spa to be pampered...you deserve it!
