Hi Cindy,
My favorite resort at Walt Disney World is the Wilderness Lodge. I could stay there on every trip and never be tired of it. I selected your question to answer because my hope is you and I might see the resorts the same way!
There are two primary reasons why I can't stay in the Wilderness Lodge on every trip -- either another family member wants to stay somewhere else or my budget for that trip won't allow the family to stay there. Thus we have had to branch out over the years!
Without a doubt, my favorite Disney Moderate Resort is
Port Orleans Riverside, specifically the Alligator Bayou section of Port Orleans Riverside. The overall resort is themed to the Mississippi bayou area of the Old South. There are two styles of rooms at the resort. Magnolia Bend rooms are located in large plantation-style manors whereas Alligator Bayou rooms are in smaller rustic lodges.
The setting for Alligator Bayou is fabulous! There are about 16 small two story Cajun-style buildings in a backwoods cottage setting. If I can't stay at the Wilderness Lodge, this is next on my list! If you decide to give it a try, I recommend buildings 14, 15, and 18. They are closest to the resort center where the arcade, food court, main restaurant, and main pool area are. My 5 year old absolutely loves the main pool area; there's also a very nice playground near by. There's also a boat that travels from the resort to Downtown Disney; it's very relaxing and enjoyable along the way!
Have a magical vacation with your grandchildren!
