Personally, I do not purchase a
Disney Dining Plan for short trips, for trips where when may not be eating on-property or if I want to save money to use towards a better Resort hotel or souvenirs. In your case eliminating the snacks is a big savings pushing you toward paying out-of-pocket. I would encourage you to evaluate two ideas before purchasing a Disney Dining Plan if you are going to have leftover dining credits due to your arrival and departure times.
1. Will we want to dine with Disney Characters each day?
2. Will we want to experience Signature Restaurants/Dinner Shows?
If "yes" is an answer to these questions then a Disney Dining Plan may be worth it because they are the most expensive dining experiences. Remember, multiple Dining Plan entitlements may be used during one day. You could bank a couple of table service meal credits to use for dinner shows such as
Disney's Spirit of Aloha Dinner Show or
Hoop-Dee-Doo Musical Revue which are a highlight of any trip.
Disney Dad Tip: All Walt Disney World Resort restaurants have
online menus. If you want to see the dollar for dollar then pull up the menus and calculate the out-of-pocket cost for two Guests for one day and compare. This should help you decide.
