It sounds like you’ve already reviewed the guidelines on the
Know Before You Go webpage on the Walt Disney World Resort website. I'm so glad that you are aware of the new requirement for making an advanced theme park reservation using the
Disney Park Pass system. This reservation is required in addition to your valid theme park admission ticket and you can make a reservation for one theme park each day of your trip. Reservations are currently being accepted through January 2023.
Also, it sounds like you heard the recent announcement that
Park Hopper has returned to the Walt Disney World Resort! You can now visit more than one park each day! However, you are not required to make an additional Park Pass reservation to visit a second (or third) park. You just need a valid Park Hopper ticket. So go ahead and make your Park Pass reservation for EPCOT on your desired day. Then, beginning at 2 p.m., you can hop over to Disney's Animal Kingdom! As always, theme park admission is subject to attendance availability.
