The great news is you can bring as much bottled water as you would like (or can comfortably carry) onboard with you. You've already caught the most important part of the policy: it must be packed in your carry-on luggage and cannot be placed in your checked baggage. We definitely don't want your suitcase, or anyone else's, getting an unexpected splash before your vacation even begins!
As someone who's really picky about my water, I completely understand wanting to bring your favorite bottled water along. That said, I have to give Disney's onboard filtration system a shout-out because I've always found the water to taste great. If you're looking to lighten your load on embarkation day, I'd recommend packing a reusable water bottle instead. You can refill it throughout your sailing at the beverage stations on the pool deck and the water bottle filling stations around the ship. Since staterooms typically aren't ready until around 1:30 PM (subject to change), that's a lot easier than carrying a heavy case of water while you're off exploring everything the ship has to offer.
