So it be a pirate's life ye seek! I am a HUGE Pirates of the Caribbean fan too! I always hope my boat gets to stay a little longer at the spot at the end of the ride at the Magic Kingdom (MK) so that I can watch Captain Jack Sparrow.
Even as an adult, you may enjoy
The Pirates League at the MK where you can be transformed into a pirate. This will really help you get into the spirit of celebrating pirates.
Brand new at the MK is
A Pirate's Adventures ~ Treasures of the Seven Seas . During this interactive experience, there are 5 treasures to help Captain Jack Sparrow raid. Just beware of Captain Barbossa and his crew. Oh and you should also prepare to do battle with the British Navy.
When you're ready to set out on your adventure, head over to The Crow's Nest in Adventureland to pick up your magic talisman (a special card specific for this activity).
While only kids can participate, I still have to stop and watch Captain Jack Sparrow's Pirate Tutorial in the MK. After all, it does feature Captain Jack.

Another great pirate adventure is the
Pirates and Pals Fireworks Voyage. This is one of my favorite ways to watch the fireworks at the MK. It involves food, fun, fireworks and a voyage on the Seven Seas Lagoon with pirates!
