Hiya Erin - welcome to planDisney!

It sounds like you've got a short amount of time, but know exactly what you want to do with it. Let's start with Monday night! You mention "in-park" and if that means you want to visit a Theme Park on Monday evening, I would always suggest EPCOT. There are TONS of amazing food options, including restaurants and bars, as well as food booths and outdoor festival kitchens. For example, through November 19th, you can experience the EPCOT International Food & Wine Festival and catch some iconic musical acts on select nights as part of the Eat to the Beat Concert Series!

If you simply want to stay on-property at Walt Disney World Resort Monday, but don't intend to visit a Theme Park that day, I have several favorite spots for a fun evening. When my crew and I are looking for a drink and a bite, we really enjoy Disney's Grand Floridian Resort & Spa and Disney's Polynesian Village Resort. Enchanted Rose at the Grand Floridian is an elegant cocktail lounge with amazing drinks, good company, and a small but amazing food menu - I dream about the Mini Smoked Brisket Sliders!

The Polynesian is a short walk or Monorail ride from the Grand Floridian and will make all your tiki dreams come true! Grab a seat at the Tambu Lounge bar to enjoy tropical drinks, select food options from 'Ohana next door, and great people watching. Downstairs, there is often live music outside on Trader Sam's Tiki Terrace, or you can try your luck at getting a seat inside at Trader Sam's Grog Grotto. This unique immersive lounge is definitely more than meets the eye, and your eye meets a lot! See how your drink influences your surroundings, and join in with the crowd to celebrate everyone's tropical choices. Just be careful not to ... well, you'll just have to figure it out!

Both of these Resorts are not the closest to Disney's Hollywood Studios, but that's easy to remedy. You can take complimentary bus transportation in the morning, or my favorite (and much faster) option, order a Minnie Van (or just a regular ol' Lyft) through the Lyft app. You can even leave your luggage with Bell Services at your Resort while you're in the park!

If you want to spend your first evening in EPCOT, or really want to be close to Hollywood Studios, I suggest checking out Disney's BoardWalk Inn or the Yacht & Beach Club Resorts. These amazing properties are right in the middle of EPCOT and Hollywood Studios, and you can either walk or take complimentary water transportation between these Resorts and the two parks! I'm not as much of a fan of the nightlife at these resorts, but that's what EPCOT is for!

I'm running out of room, but to answer your last question, special tickets aren't required for either of the newest Star Wars attractions, but purchasing the Disney Genie+ Service and an Individual Lightning Lane can make things easier. If you'd like to, please send in another question and I can tell you all about it!
