You definitely will not be done with dinner by 7 p.m. I've found that most table-service restaurants at Disney (that are not buffets) take about an hour and a half easily. Keep in mind that although your reservation is at 5:45 p.m., you may not be seated at that exact time, especially if you do not check in at the podium at least 15 minutes ahead of time. Additionally, your party will be taking pictures with Cinderella, and even though you can let your server know you are trying to be out of the restaurant by a certain time, you will need time to exit and find a place on the
other side of the castle in which to view the parade. Here in the South, we call it "too much sugar for the dime."
If it were me, I'd enjoy a relaxing dinner and then on your second day, plan on the parade and fireworks.
